Skillet Greek Chicken

This Skillet Greek Chicken is tangy, warm, and full of Mediterranean flavor! Pair it with rice, couscous, quinoa, or pita bread, and a side of yogurt or tzatziki for a delicious meal. In this recipe, I used Primal Kitchen Greek salad dressing because I love the flavor and clean ingredient label, but feel free to use whatever you like or have on hand.

Ingredients
- 2 large chicken breasts, cut into bite-sized pieces
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp poultry seasoning
- 1/2 tsp dried dill
- Salt and pepper, to taste
- 1 Tbsp avocado oil
- 2 Roma tomatoes, diced
- 1/4 cup olives, sliced
- 1 handful fresh spinach, chopped
- 1/2 cup Greek dressing
- 1/4 cup feta cheese
- Chopped red onion optional
Instructions
- In a large skillet over medium heat, add oil and chicken pieces. Season the chicken with garlic powder, onion powder, poultry seasoning, dill, salt, and pepper.
- Stir the seasonings to coat then cook the chicken until it's browned and almost cooked through.
- When the chicken is almost cooked through, add the chopped tomato, olives, spinach and dressing. Cover with a lid until spinach is wilted.
- Once the chicken is fully cooked and the spinach has melted, top with feta cheese and optional red onion.
