- 2 large chicken breasts, cut into bite-sized pieces
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp poultry seasoning
- 1/2 tsp dried dill
- Salt and pepper, to taste
- 1 Tbsp avocado oil
- 2 Roma tomatoes, diced
- 1/4 cup olives, sliced
- 1 handful fresh spinach, chopped
- 1/2 cup Greek dressing
- 1/4 cup feta cheese
- Chopped red onion optional
In a large skillet over medium heat, add oil and chicken pieces. Season the chicken with garlic powder, onion powder, poultry seasoning, dill, salt, and pepper.
Stir the seasonings to coat then cook the chicken until it's browned and almost cooked through.
When the chicken is almost cooked through, add the chopped tomato, olives, spinach and dressing. Cover with a lid until spinach is wilted.
Once the chicken is fully cooked and the spinach has melted, top with feta cheese and optional red onion.
