Ingredients

  • 2 large chicken breasts, cut into bite-sized pieces
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp poultry seasoning
  • 1/2 tsp dried dill
  • Salt and pepper, to taste
  • 1 Tbsp avocado oil
  • 2 Roma tomatoes, diced
  • 1/4 cup olives, sliced
  • 1 handful fresh spinach, chopped
  • 1/2 cup Greek dressing
  • 1/4 cup feta cheese
  • Chopped red onion optional

Instructions

  • In a large skillet over medium heat, add oil and chicken pieces. Season the chicken with garlic powder, onion powder, poultry seasoning, dill, salt, and pepper.
  • Stir the seasonings to coat then cook the chicken until it's browned and almost cooked through.
  • When the chicken is almost cooked through, add the chopped tomato, olives, spinach and dressing. Cover with a lid until spinach is wilted.
  • Once the chicken is fully cooked and the spinach has melted, top with feta cheese and optional red onion.
